RECIPES OVER THE ROAD: PIZZA CHICKEN

Welcome to Recipes Over the Road, a cooking show for truck drivers. We know it can be hard to cook in the cab after a day of driving, but it doesn't have to be. There are plenty of recipes that are easy to make, healthy, and most importantly: taste good! Join Chef Linda as she shares her Pizza Chicken recipe with us!



Ingredients:

  • 4 Boneless Skinless Chicken Breasts or Thighs

  • 1 cup Shredded Mozzarella

  • 1 jar of Marinara Sauce (24 oz.)

  • 2 teaspoons of Garlic Powder

  • 2 teaspoons of Italian Seasoning

  • Salt and Pepper (to taste)

  • Pepperoni Slices


Instructions:

  1. Preheat your convection oven to 400 degrees.

  2. Spray your baking dish with nonstick spray OR add parchment paper to your baking dish. Add two pieces of chicken.

    1. If you are using breasts, butterfly them out but do not cut them all the way through.

    2. If you are using thighs, there is no need to cut!

  3. Season chicken with garlic, Italian seasoning, and salt and pepper. Add pepperoni and mozzarella on top.

  4. Pour half of the marinara sauce on top.

  5. Add the other two pieces of chicken. Pour the remaining marinara over the chicken and add more mozzarella and pepperoni on top.

  6. Place in the oven and bake for 20-25 minutes OR until the internal temperature of the chicken is 165 degrees.
